Very Berry Pie

I hope everyone had a fantastic weekend! I really enjoyed sleeping about 5 hours more than normal! It was too cold to do much else!

Have I bragged lately about how wonderful my bf, Matt is? Yeah? well, I’m going to again!

On Friday, he surprised me at work with flowers and my favorite Trader Joes candy! (dark chocolate almond toffee!) Nope, thats not Paleo, but it makes me happy!

Saturday, I did a strange workout…it wasn’t for time, it killed my upper body!

  • 5 Rounds
  • Bench press (75%-100% bw) as many reps as possible..I did 115#
  • as many pull-ups as you can do (without letting go of the bar)

After that, I headed to a local rockgym to try out climbing for a blog I’m writing for girlnetic.com (check it out Wednesday!!!)

Not to brag AGAIN, but Saturday night, Matt took my shopping at Christmas Tree Shops to buy Christmas decorations for our new apartment! (We’re moving in together December 1st!) THEN, we watched Elf! 🙂 (and I fell asleep at approximately 8:30pm, then was sent to bed at 9:30…in my defense I was sick!)

Paleo Almond Joy Bars, compliments of Frisky Lemon!

 And this delicious looking yum is a Very Berry Pie!


Crust Ingredients:

  • 2 cups blanched almond flour
  • ½ teaspoon celtic sea salt
  • 2 tablespoons coconut oil
  • 1 egg
  • 1 tbsp coconut sugar

Mix together until a moist dough forms, then press into a pie pan (or I used an 8in cake pan because I don’t own a pie pan!) Bake at 350 for 5-8minutes

Berry ingredients:

  • 1 sm package raspberries (1-2 cups?)
  • 1 sm package blackberries
  • 1/2 cup strawberries
  • 1/2 cup water
  • agave to drizzle

Mix all ingredients but water into a pot and cook the fruit down. It will get very liquidy, then it will start to thicken again. Before it thickens too much, pour into the pie crust. Bake 10 minutes at 350. Then drizzle with some agave (or don’t, up to you!) Let cool for about 5 minutes. This will keep the juices from going everywhere!
